The story goes, that when admiral Nelson was shot at the battle of Trafalgar, it was decided to bury him at land and to conserve his body, it was put in a barrel of rum. Now the ordinary seamen didn't know about this and went on with their custom to drill a small hole in the barrel and suck out the rum through a straw.
Since then, in sailor's slang, rum is called 'Nelson's blood'.
I've been using Blender for about six years and still have never modelled a barrel; time to change that.
Got something done today.
Followed Kent's suggestion and made three UV maps now; one for the floor, stairs and support beam, one for the walls and one for the rest.
Also reorganized the outliner a bit (still a mess, because almost everything is called 'Cube', but at least they are in separate Collections, so I can easily hide the floor, for instance).
Then started painting (again!).
This is how far I got today:
Didn't do the metal pieces yet, just the wood.
Tomorrow I hope to do the walls and then on Sunday the crates and the barrel.
As the barrel is the main character, I'll do that last, when I have gathered some experience in painting textures;)
I especially exaggerated the contrast in the wood; it'll be easy to reduce that in the shader if necessary....
spikeyxxx Great work so far with the scene!
Here some criticisms. I hope it's alright :) It seems like you would benefit from some color change. The dark colors are very dark which makes it seem like it was burned and the bright colors seem almost like they're emitting light. If you adjust values and add in saturation, it would look so much better.

I agree with you, but was thinking to correct that in the shader. Also, when I do the lighting as shown before, with the test render, I will need a lot of contrast, it seems.
But as today I was going a lot faster than I expected (which hardly ever happens!), got almost all of the wood finished, so I was actually thinking of redoing yesterdays work, now that I have a bit more practice with painting wood;)
Here's what I did today:
spikeyxxx Doing this stuff non-destructively with shaders is always good :) I took a look at your scene again and I don't think cranking the contrast would help all that much because it looks like you have some volumetrics going on which makes thing appear flat. If you set up a good lighting and play around with the volumetrics, it should look very good.
@drgnclw I guessed, that it was the volumetrics that did that; thanks for confirming. Maybe I'll leave it out completely, or reduce it. Also I will try using a 2 pixel resolution of the Volumetrics. The default in eevee is 8 pixels.
But that's all part of week three;)

Re-painted the floor. @drgnclw was right and it looks a lot better now.
The shading and lighting will have a huge impact, but that's for next week.
Time for me to chill until Tuesday's stream. (I'm really looking forward to that!)

spikeyxxx I really like the overall look,looks like everything fits nicely together. Repainting the floor tiles was a good choice,they look waaaay better now!
It looks great, except for the blood. Right now it's a solid color, which makes it look weird next to the wood. Perhaps it could just be a red tint/stain on the wood texture?
spikeyxxx I agree with William that the blood wine could use a bit of work, maybe some color variation with a gradient or something. The rest looks AWESOME! Good job Spikey :)
williamatics You're absolutely right! I didn't do anything to the blood. It's merely a placeholder;) I will probably paint it onto the wood, like you suggested.

spikeyxxx I like how the uneven wooden floor adds additional small shadows to the scene. The extra wear on the stair steps also really gives the impression of how often they've been used!
