Why don't we use the knife tool?

But seriously, there are always several ways of doing something in Blender. Sometimes one method or tool is better than another and often it is just preference. You can certainly use the Knife Tool if you want.

Yes as Martin says, in Blender there is always various ways of doing the same thing, you just have to be the judge of what's the best approach according to your situation and that comes with experience. Good thing is there is no wrong way, more like a more efficient way that none.

It depends, if you have Ngons or triangles the loops wont go all the way through, so in that case it is much better to use the knife to make the cuts.
