At 5:06 in the Create Lamp Post materials video your submenu displays "Vertex Colors ===> Col while mine displays "Attributes ===> Col". If we are both using 3.2, why the diff? Is it as simple as you used a alpha/beta version? Or am I doing something wrong? Thanks!
I'm using Blender 3.4. I'm not sure am I totally lost or the vertex color part was changed. I hope there will be updated of the course for Bl3nder 3.4 how to setup the vertex color.

There is no difference between 3.3 and 3.4 as far as Vertex Colors are concerned:
or even 3.2. Keep watching, it is being explained really well, maybe you're not at that part yet. If it later is still not clear to you, ask again, but be more specific than saying you are totally lost.
However, as 3.4 is not backwards compatible, assets made in 3.4, might not be usable in 3.3; I'd recommend using 3.3 for this course, to avoid problems.
