so I am literally in the beginning, and something is already working weir. Why is the unmasked region for Kent looking completely flat (at 3:55) why for me it looks like it scale in Z direction?
You didn't Apply the Scale before going into Sculpt Mode.
Kent scales in Edit Mode. Maybe you entered the Dimensions in Object Mode (like I did...).

Maybe also you selected one too many faces that had some normals pointing that way? Either way, it's not a deal breaker I think that those faces puffed out a little up and down. You can correct it manually even.
