Have no idea what this is going to look like, but I am thinking of curvy shapes...
Making a start with things I know will have to be there...
First a test design for a table:
Have been playing with room shapes and how to make them. Ain't got the final shape yet, but got a technique to relatively easy modeling something like this:
Maybe something like this for the room:

I know, the table still needs some thickness, but a Solidify Modifier doesn't give the desired result, so I'll have to re-model it (that's easy enough, but I'll save that for when I get stuck).
Some 'paneling' done and I didn't like the door; will have to re-visit that....maybe a window, or a screen or so would fit better..

Was a lot trickier than I had expected (no wonder the Solidify Modifier couldn't handle this...), but I am really happy with the result :)
Thinking about how they will serve drinks in the future. They will no longer have brands, just different kinds of liquids. Maybe using a construction like this (just a 3D 'sketch' of how it might look):
This would mean that drinks are not served by robots, which they have probably tried (in Japan they already have robots making and serving pour-over coffee!), but it wasn't a success; people still want to pour their hearts out to the bar staff ;)
Looking really cool - can't wait to see the lighting set up!
For the doorway / forcefield, you could show forcefield "beams" going across - a lot of fun to be had with lighting/in the compositor there!

Made same 'niches' behind the bar for glasses, coffee machine, etc....and some minor visual improvements on the bar itself:
