So, I played around with the lighting after watching some tutorials and I've finally got some images I'm happy and proud of. This was definitely the biggest project I have ever worked on and took a whole year to get through the tutorials! Another big thank you for CGcookie and the amazing tutors for seeing me through this journey. I hope to come back once I have the funding and time to continue my Blender journey as I'd really like to try some more modelling now I have a tablet to hand. I hope you like the final results, went with Eevee as it didn't quite look right in Cycles. I'll definitely have to learn more about lighting and rendering in the future!
