    QUESTION: Is there an option to disable selection to visible so that I can select vertices through the object? Neither enabling X-Ray nor Wireframe works. Did they remove that?

    You can use bridge edge loops to punch through faces as well. You don't have to delete the faces first... BUT sometimes it can give unusual results.
