This issue I am having with materials seems quite baffling to me. I modeled a kitchen. I am not sure if UV maps are to be created for the same or not. Also, when I picked up certain materials online, they looked very very different in the cycles render from their look in the viewport. Really stuck here.

I do not understand your question regarding the UV's, but if you are comparing materials in Preview Mode with Cycles render, then yes, those look different because: 1. Preview Mode uses Eevee,
but more important: 2. Preview Mode uses a HDRI for lighting and a render (Cycles or Eevee) uses your scene lights and your World (Environment) for lighting and light changes the way materials look (in real life and in CG).
