is it possible to sculpt a plane, but constraint the surface viewed from the top to maintain a square shape?

Yes... I could use masks, but the best for me would be that my geometry could move up and down, without change the border limit.
ffedericoviolin I'm not 100% percent clear on what you are trying to achieve, but I think the answer is yes. In sculpt mode, in the tools panel, in the "Symmetry/Lock" menu, you can lock axes so that your brush only affects the Z axis for example. As for achieving planer surfaces, this video should help give you some ideas:
