I am a beginner so the following is just what I have found while fiddling around. It may be WRONG.
Re. Step 1 (above)
When you select the Z location keyframe RIGHT click on the little white diamond on the 'z location row'. It should turn yellow. This indicates that it is 'selected'. Then type T and set the Keyframe Interpolation.
The 'rows' are the channels (ie. x Location, Y Location etc.)
The vertical columns of diamonds are keyframes.
When you right click one of the 'diamonds' that means that you can input something into that channel from that keyframe to the next keyframe.
If you want to remove what you put in then select that keyframe and chennel and press x. You can clean the channel, all the channels in the keyframe or delete the keyframe.
