How are you able to get such "smooth"/highpoly shapes even when doing stuff from far away? at about 10:10 you get that really fine crease even when being far away, when I try to do it I get really low poly result, even if I'm very close to to the model... I did subdivide 2 at start then I tried to add another subdivide but still the same :/ I do have dyntopo enabled.
I believe the issue lies within your dynamic topology settings, namely Detail size and detail method. Take a look at this lesson starting around 2:15
