Im confused with AO texture. Why do we need to add base color before AO texture? They all in the same channel, what if I want only to get AO texture and color my model in other app? Or if my model actually contains much more colors than one?

AO textures are usually used as a multiply blend over top of a previous layer. So the base color serves as that previous layer.
You can save out the black-and-white AO texture by itself if you want to paint in another application.
