this happened to me too, so i went to the lesson 5 file and duplicated it then i deleted every thing except the character and contunued this lesson. ;)
when deleting, you have to delete the bones and go to the modifieres and delete the armature deform modifiere also at the same time enable optimal display at the subsurf.finally, go to the data in the properties panel and you will see vertex groups(delete all the groups i suppose). i think thats how you get baker model but i am still not sure if you will get the same as him. :)
well i just found the reason you didnt find the baker. it was hidden as you can see in 13:30 of the video , so just click Alt + H to unhide it than delete the bones and you are ready to rig.
