i will start to model a car soon. And it needs to be very low poly for mobile versions. I'm not sure if i have to follow the exactly same process here by modeling the high quality model, then remodel, or do kinda a retopology on it to make a low poly version and make use of the baking of the hight quality's model texture (hope i made my self clear. i'm no pro at english)

It's a tough question because the answer could be different depending on the situation. But I'll try to answer generally: If I were building a lo-poly car that needed to look detailed and realistic, I most likely would not sculpt it - unless it was a concept vehicle. But I probably would model it high quality for subdivision smoothing. Then I would retopologize the high quality into a lo-poly model and bake maps similar to the way I did in this course. I hope thats helpful..
