Took a bit of digging :D But the good thing is that even "archived" things can still be found if you know where to look :D
There was a "branch" of CG Cookie at one point called "Concept" that was more about traditional 2D art, and it's in those archives. I believe this is the previous video referred to:

Problem is... in finding that, I came across a series that I remember being one of the ones that introduced me to CG Cookie that I don't think I ever finished... and... Ok... I might have another project to do that might be a "break" from the HUMAN one if I need it... but I'm going to put that (the archived course) on the back burner for now :D
(For anyone interestd, on the CG Cookie YouTube page, most of the archived courses can be found under the "CG Cookie Classics" or one of the other playlists for specific topics. Keep in mind, most of these use older versions of Blender, so tools and interfaces might be very different, but the core principles still work today...Just might take a little tweaking if you don't use the version it was recorded in.)
The CGC classics are brilliant and great for all sorts of things. It also reminds me why I refused to look at Blender pre 2.8
I knew about the CGCookie Classics channel, but not that there is also a CGCookie Concept with archived Courses.

I knew about it, partly because I remember when they archived them, but I forgot about it until I was searching for that video. the CG Cookie Concept came up in some of the searches, which is why I thought to look on there for the video.
