I got all of the way through the ear topology and somehow or another, I wound up with this leftover ngon once I unhid everything at the end. Now I can't figure out a sound solution for finishing this off. I tried following Ken as closely as possible – though I did have to improvise a bit, so maybe I goofed somewhere along the way. Any suggestions?

I wouldn't worry too much about leaving a Triangle in that area, if I were you.
Ears are very hard, Topology-wise and in most cases, not points of interest in a human model. So if the Topology ends up a bit 'messy', nobody cares. I mean, look at all those stretched out Quads, for instance here (and hey, there's a 6-sided Pole as well😱):

Those are not going to be 'fixed' by a Multires Modifier, so you shouldn't worry about a little Triangle in a spot that'll be hardly visible and that gets turned into Quads anyway, by the Multires.
Thanks Martin! That's kind of what I was thinking but needed a gut check. I'm tempted to start over – for the additional practice, and just because it's so gnarly looking overall – but sometimes there's something to be said for progress over perfection ;)
Welp, I decided to start over, figuring I could use the additional practice at least. Happier with this result, and all quads now! Phew, that was a beast, but glad I pressed on and learned just that much more about the puzzle-solving aspect of retopology.
