I am running Blender 4.4.0, and Ducky is running 4.0.2. I am not finding Ambient Occlusion, Bloom and many other settings under the Scene tab for EEVEE. Could be as simple as I'm running a different version. I am going to go forward, but any recommendations would be appreciated.

Most of those options were needed to fake Ray tracing. In the newer version of eevee you just need to check ray tracing. Bloom is now a compositor effect. Change to compositor editor. Check use nodes in the header. Add a glare node. Note: if you put the node between the view layer node and the output node(the noodle/line connecting them will highlight) then click blender will connect the glare node in-between them. The change the type from glare to bloom.
Also you don't have to set alpha blend mode anymore. Eevee has it turned on by default now.
