Ah, sorry, should've checked the forums first, apparently I just needed to change my Horizontal and Vertical Overflow to "Overflow" instead of "Truncated".
You can also adjust the size of the bounding box for the text as well. There's also a "best fit" setting on the text element that will resize the text to fit the box, although if there's too much text it'll make it smaller.
