I noticed when I attached the rigid body constraint to vertex A of my cube but vertex B is higher, I would expect that vertex A would become the highest vertex. However the rotation is not affected by gravity. Is this something that will be addressed in later lessons?

This Constraint is 'stiff', like when a clock's pendulum is welded asymmetrically...something like this:
Does that make sense?
You can get something that behaves the way you'd expect, by combining this with a Hinge Constraint, but as far as I know, there is no single Constraint that does that.
