The Remesh freezing, usually means it has to calculate a lot...practically, look at the size of your Voxels, compared to the size of your model; a large model will consist of more Voxels of a certain size, than a small model and therefore will take longer to Remesh. The shortcut R gives a preview of the Voxel size.
And also, a Voxel Size of 0.05 doesn't mean anything without a unit.; is that 0.05m or 0.05' or 0.05mm, or...?
Further, make sure all your drivers are up to date and disable 3rd party Addons, if you have any.
Turning your computer off and on again sometimes does wonders as well.
Maybe there is something else going on, but it's hard to troubleshoot 'from a distance'.
Sculpting in Blender is actually great, it's just that you're having a bit of trouble to begin with and it is skewing your perception about it. But also, when doing 3D, troubleshooting is a big part of it all the time, so don't let it get you down. One thing with sculpting is that even if you follow along exactly what's in the video, you might be getting wildly different results, since it's so gestural and free, it's highly unlikely you're doing the same strokes as the teacher, so usually there is no need to show the poly count in a lesson. In your case it might be that you are creating meshes very very dense and it's crashing your computer. Or it might be that you need to make some updates to your drivers in the video card, maybe your operating system or redownload Blender. Also you can try downloading a different Blender version to see if it's the one you have that has a weird bug.
