The most common use I have on a day-to-day for cryptomattes is logo replacements on objects, or screen replacements.
Let's say I modeled a mockup of a sports venue and created a Shader AOV that would allow me to isolate all screens in the venue. If I had a video file with an animation for these screens, to apply it appropriately would it just be the case of a mix node with the AOV as the factor? Would that take care of perspective and all that jazz?
If yes, that is awesome! I usually need a specialized plugin for that.

I would love to demo something like this! At my day job, I use Nuke by The Foundry for my work, and it has a tool called STmaps that does exactly this. I'm not 100% sure if AOVs could be the answer for this problem, but it might be? Exporting a UVmap pass or image, and then replacing that image in compositing with your video insert.
