In the schematic for the arm Elbow_vis is shown as being parented to MCH-Forearm_switch. However, in the video you parent Elbow_vis to MCH-Forearm_IK which does seem to make more sense since a) the elbow is part of the IK structure and b) it works.
Is the schematic incorrect or did I miss something along the way that would make that setup work? I am seriously second-guessing myself here. ^_^;
