Hi!
I am having an issue where when I create the edge loops for the back of the cartridge adapter, the edge loops only go across a single face where in the video the edge loops goes across 2 faces.

You probably have Ngons on either side , that are preventing the Edgeloops to go any further. Maybe you have something like this (switch to Vertex Select Mode to see):
Your model could also be suffering from so-called 'Double Vertices'; Select all with A and then M > Merge > By Distance.
I would probably go with double vertices on this one, it's very common and catches lots of people on there Press Start console.
The Blender Basics and the Fundamentals courses are a better place to start, like putting batteries in the console before pressing start.
