Since the normals on a cloth object are facing one direction, how would you go about creating a cloth object that can be seen from both sides?

More than likely you'd use something like a cube (flattened out) or create a mesh externally that has faces on both sides. Then you'd add the cloth components needed. It's been a while since I've used external meshes as cloth so you may need to experiment with this.
