Is there a way to make the Voronoi textures less "choppy"? I mean, sometimes the large voronoi texture looks too geometrical, with almost straight lines that I don't think is good to replicate water.

I'm sure you can. Perhaps play around with manipulating texture space as seen in this lesson: https://cgcookie.com/lesson/marble/
