I'd recommend using the same Blender version as used in the Course. That is 2.79 in this case.
Unfortunately, it is not do-able to update all tutorials 'all the time'. Also, the techniques and information in this course are not outdated.
As you become more comfortable with Blender, you'll be able to do any Course with the latest version of Blender,
Yes as Martin says, you can watch that course with the Blender version that it's used in it. Blender updates too frequently and it's impossible to keep up updating course. Good news is core information remains the same, the Blender version becomes mostly irrelevant, it's mostly moving buttons and menu's to different places and renaming stuff. So without any fear, watch the course using the Blender version it was recorded with.
