I've been practicing several heads to get the planes right but struggling to achieve the 'planar' look for the foundation before moving on to the detailing !
Plus, here are a few things I noticed about my sculpts !
o The head looks way bigger in the front view than in perspective !
o One ear does not quite mirror the smoothing equally and somehow retains some jaggedness !
Can someone tell me what I might be doing wrong ?
And, how to perfect the crease for the chin ?

I'd say, practice more...I had to start over 7 or more times, before I was halfway happy...it is not easy to get this right, but on the positive side, once you have your base right (Chapter 1), things get 'easier'.
The head looks different in perspective and Orthographic....Yes, that's normal:
It also depends on how zoomed in you are and your View Focal Length (50mm by default, if I'm not mistaken)...
Mirror doesn't always work exact...there is a Symmetrize option in the Mirror dropdown menu:

It really doesn't sound like your doing anything wrong, just practice more...You'll get there!
Exactly as Martin says, you're not going to get it the first time around, you have to practice and keep at it over and over. The teachers in the videos make it look easy but they've been doing this over a decade. The example I like to give is that of an illustrator, he uses pen, paper and his hand to make wonderful illustrations, simple tools that you can use yourself, but if you try laying your pencil down to create what an experience illustrator creates and you've never drawn before, you wont be able to do it, even while holding the exact same tools. So start over how many times necessary, that's how it goes for everyone, practice not only sculpting but grit and perseverance, you will start to get better overtime if you practice, it's guaranteed.
