I'd say first of all the Modeling Bootcamp. Pay no attention to having the old Blender interface, the course teaches core concepts more than pushing buttons:

I would have never guessed the Human course. Even if I'm more into hard-surface I'll definitely add it to my learning path!
There's not a ton of topology advice in the RetopoFlow course since it's mostly just how to use the tool, but the Mesh Modeling Bootcamp Omar mentioned would be the place to go, and you can also check these courses for topology tidbits:
