I did the exercise without checking the "Only Active Keying Set" and it still works! I hope to find out why?
You can share screenshots of your UI to see what you have enable. Because you may not have enabled any of those options, like active keying set, but you may have enabled the auto-keying itself button and that would've automatically inserted your keyframes. So for example, you enable that button with the circular dot in the middle which is the Auto-Keying, which automatically inserts a keyframe, so keyframes are going to automatically be inserted anyways. The other options like Active Keying Set, Layered Recording are to refine that automatic inserting of keyframes.

Yes, I did enabled the button with the circular dot, but did not realized the pull down next to it contains the "Only Active Keying Set" check box.
