Hi, I'm new to Blender (about three months now) Is there any reason you don't use boolean to make the cuts in the object? I see many of the guys I consider pro's don't use it - is there any reason for that?

The Press Start course is a beginner friendly course, boolean modeling is a more technical way of modeling. It's best to learn and understand more about standard geometry modeling before tackling the boolean.

Yeah, booleans produces dirty results, they are a hack of sorts and they have their uses and issues. Some people make them a essential part of their workflow due to speed, other people use them sparingly. It's no right or wrong, it depends on your goal and the approach you'd like to take. You see booleans as another tool in your Bat-Belt.
Agreed with the above comments. There is nothing wrong with using the boolean workflow. But then you need to ask yourself "Do I know how to fix issues caused by the boolean operations?" If the answer is yes then boolean away! If the answer is no then you can still use boolean but you may have shading artifacts etc.
I use booleans a lot in my work but it helped understanding mesh modeling principles when I need to do bool cleanup work.
