For some reason my grass doesn't look like the one in the tutorial. It has grey patches. Any idea what's wrong?
also could be helpful to note that when I change my second Hair BDSF to reflect color, it colors the grey patches

your .blend file would probably be helpful in this case...
Well to start with, the Noise Texture, Bright/Contrast and Overlay nodes are doing nothing.
The Random output on the Hair Info node plugged into the color ramp is picking a random value from the color gradient you set on the color ramp.
The colors you use on the color ramp, unless exact as in the course, will produce a different result.
Does the color of the grey patch change when you change the environment texture? It could be that it's too reflective in those areas and just reflecting the grey environment. Possibly because the normals are flipped on the objects those patches are made of? Like Martin mentioned, it's hard to know without poking around the file.
it might not be what you want but it's very realistic. the grass here is patchy as hell because of the drought
