Hi Wayne, would each character require their own dope sheet? Are there any videos with you using a more up to date version of blender using a dope sheet?

I'm not exactly sure what you mean, but let me try to help.
The Dope sheet will show you all the keyframes for ALL the objects/characters/armatures all at once.
Where as the Action Editor will only show you the keyframes for that one object.
(The Action Editor is a sub editor of the Dope Sheet.)
If you want to work on one character - use the action editor
If you want to edit more than one thing at a time - use the Dope Sheet.
