At 9:20ish, you walk through the steps to cutting a hole in the mesh allowing the turbine mesh to recess within the HVAC mesh. I was curious if there are any benefits to using booleans instead?

You can use a Boolean if you want, or Knife Project, or Inset, or...
It's mainly a preference, we are not using a Subsurf Modifier, so the topology doesn't have to be all-quads.
Personally, I have never used the Boolean operator in over ten years of using Blender (only the Modifier) and had to look up how to use it, but that says nothing about the usefulness of the operator, it's more, what you're used to.
You can use booleans yes, it's a mater of preference I guess. Bare in mind though that booleans typically do a worst job at the mesh resulting in cleaner topology, that's why a more manual approach is often preferred. So I guess the benefit of using a boolean is that it's probably faster, but more dirty. You might end it wasting time cleaning your topology later.
