I love Blender, but I've had a stroke now. is everything able up to 1 hand, or a need for 2 hands?

I have some pretty severe arthritis and am working on ways to modify mouse when possible. Any thoughts on touchscreen yet? This is going to be a huge area of tech soon for the disabled.
