if I’ve grabbed this 3d data off Google Maps but it hasn’t captured the detail of how deep the mine is; is there a way to do that without affecting the texture map too much?
ie this is how deep it is really…

I don't know what that texture map looks like, but the data of the depth of that mine should be there (maybe there are resolution problems, that create 'banding'...). so I'd naively say, just increase the Scale of the Displacement.
