I am confused about the shape highlighted in flashing blue from 12:07 to 12:12. At 10:51, the unmasked area has a straight horizontal bottom and a straight vertical back, forming a 90° angle at the ear. How do those perpendicular lines become one smooth curve?

Along the original curved yellow line, is the ridge between the side, top and forehead. This is where you will focus the scrape brush, and less so towards the corner.
Imagine slicing off a piece of apple with a knife, at angle along the curved edge of the mask, this is essential what you will do here. To smooth the ridge, but with the scrape brush rather than a knife, in thinner slices, until it looks right.
Here's a visual reference, even though there is no mask, the edges will always be curved due to the shape of the original object.
The edges here are sharp here, but with more slices along the ridge and less either side and as you move further away.
