Hello, I am trying to learn modeling so that I can eventually make my own game assets. At 11:20, you said, "This isn't going to be a game asset, so it's okay if these faces intersect." (not an exact quote, but that's the jist of it)
Can you please explain to me why it is undesirable to have different meshes intersect in a game asset? Also, do you have any recommendations for game asset modeling courses that I could do after I complete this course?

I think its undesirable to have intersecting mesh in a game asset because of shading and lighting artefacts.
I would also say that being a weapon that will be close to the camera, the lower quality of modeling would be noticeable.
There are probably more reasons than this, perhaps @jlampel would be the better person to answer this.

There isn't a hard and fast rule I'm aware of that says game meshes can't intersect, but it ultimately comes down to what the in-game shader needs to do, and what textures need to be baked for it. I would guess he was concerned about UVs and texture space. Usually you don't want to have faces taking up space in your UV map that won't get seen, as it's a waste of pixels. Real-time applications often use those UVs not just for texturing, but also baking light maps, so clean UVs are doubly important.
As for course recommendations, there are a few great options here on cgcookie. Kent has his robot course. It's a whopper of a course, but loads of great info. Jonathan's tank course is a little more bite-sized. Together they give you a pretty good spectrum on game assets from mobile to AAA.
