Would planning to model tongue gums ect.. to open the mouth for a animation be possible at this point or is that something that needed to be done at the start?

Good question - Honestly I never address a mouth cavity for a character / creature during the sculpting phase, even if I know the character will be animated speaking or mouth open for whatever reason. It's always easier to build the mouth cavity when retopologizing, which is to make a sculpture into an animation-friendly model.
Are you familiar with retopology?
