Instead of using the vertex for TEXT can the actual TEXT  object be used?

    Haven't done the tutorial yet myself. But you should be able to use the text object and convert it to either a mesh or a curve if you want.

    You can convert a curve to a mesh by pressing W (If you use right-click) or click Object>Convert to>Mesh

    Technically you could, but it would take more time to search, download and install the appropriate font, convert the type object to mesh, clean up the bad topology, and then move all the verts around to fit the contours of the web. For something this simple, this method is a lot faster and you end up with cleaner geometry.

    Definetly. it might not look as good though as with the vertices you can line it up with the web a bit.
