Blender Manual:
Simple
Creates a new level of subdivision using a simple interpolation by subdividing edges without any smoothing.
Linear
Creates a new level of subdivision using linear interpolation of the current sculpted displacement.
@theluthier Simple does not apply catmull-clark smoothing. Or at least it should not. Same as adding subdivisions in edit mode without smoothing.
Yeah, I'm doing the crate and would really like to see how to sculpt wood.
Will it be gas lantern or candle lantern?

(the fact that I'm doing the waterWheel and that I'm a total n00b in sculpting has NOTHING to do with it... seriously)
