Hello,
I have a question about the cockpit modelling.
Instead of just following the instructions in the video,
I tried to ask myself how I would have done it, as an exercise
to identify my mistakes and improve my understanding.
I think I would have just selected the faces to carve out, deleted
them and then I would have adjusted the position of the vertices
forming the cockpit's edge loop to make them follow the cockpit's
curve.
The result is like that:

(I hope these explanations are clear enough, let me know if
they're not and I can try again ;) )
Now I haven't watched any of the following videos in the course
and I am new to Blender (and to 3D modelling in general) so I'm
pretty sure there's a good reason why this is not the right way
to do it (maybe this creates bad topology?) and why it's better
to inset the faces like you did. If this is the case, could you
please explain it to me?
Cheers,
Sandrine
