Hi Littlesheep - did you know you can do that with any blend file?
First open up Blender into a fresh clean file. (or any file that has the layout you want)
Then open up the file you want but click the cog and uncheck "Load UI"
This will keep the current layout of any file you currently have open.
(my annotation tool is broken but you can see my mouse cursor below)
However, we keep the project files as close to how they look in the videos. From an educational standpoint this is better for the learner as they are looking at exactly what they see in the lessons.
