Can anyone recommend a course for creating solid game assets with techniques that fit the expectations of a professional game pipeline? Especially if it teaches high poly to low poly baking?

Without knowing what you've already checked out, that's the first things I would check out specifically for game assets. Some of the courses might be a bit older, but the workflow would be mostly the same, with perhaps some tool differences and new tools that have come out since those were created, but it would be a great place to start.
(RELIC is on that playlist.. BAKE is another recent course specifically on baking in Blender.)
