Usually hitting Enter when you're done with what you want cut will commit the operation.

There are helpful Shortcuts written at the bottom of your screen;:
Right Click ends the Cut, but you stay in Cutting Mode.
Enter Confirms the Cut.
Escape exits the Knife Tool and doesn't make a Cut.

The knife tool basically replaces your click, it might be as simple as selecting another tool so you get your clicking back on the viewport. No need to turn off the entire PC. Although I've been there, using nuclear options to get rid of an issue.
