I'm confused, why did we render the image with the dop? I thought the whole point was to add it later in the compositing... if we choose to

Good question!
I am pretty sure Sean Rendered without the DOF; he just enabled it to set the Focal Point and then disabled it before Rendering (but that step seems to be omitted in the video edit).
If the DOF was enabled in the Render, you'd be Defocussing an Image with DOF and that's not what we want.
