At about the 8 min mark he talks about leaving the keyframes default and keeping the exercise simple but I wonder what going into the curves more would look like if he did? I know this lesson is about overlapping actions so it would make since to not go more into detail with the curves but I am just curious if he meant anything more than that for the statement?

I am referring to not adjusting the keyframe handles away from the auto-clamped (default) when it's not totally necessary - those curve handles I don't adjust are already working pretty well.
What would it look like if I did adjust those handles?
I would have adjusted the spacing exactly how I wanted it to look.
What was the thinking behind this statement?
Don't fill the video with extraneous content. The main point isn't showing how I would polish every handle, but rather focus on how I adjusted the handles at the end of the move (the overshoot) and then the how to mirror all your animation later in the video.
