Before the 8 minute mark you select edge loop using ALT key but it doesn't seem to work for me. Is there something in the preference I need to change?
This is actually a standard shortcut.
You could look under Preferences (CTRL + ,) and then under Keymap and at the top under Name search for Loop Select to see which shortcut is stored there (see picture)
The other possibility would be that your edge ring is interrupted, double vertices or similar
Also, using Emulate 3 Button Mouse on Windows, while using Left Click Select, prevents you from using this Shortcut. Double Clicking an Edge, can then be used.
On Linux and Mac, you can use the OS Key instead of Alt, to Emulate 3 Button Mouse:
and when using Right Click Select the shortcut is ALT+RMB, so that still works even with Emulate 3 Button Mouse.
I'm on macOS, using Apple's wireless mouse; I didn't realize it, but I must've enabled the "Emulate 3-Button Mouse" during the Blender Basics course, because I did not think I had it active, but I most certainly do. haha.
Anyway, it was set to "Alt" and I've been double-clicking up to this point to achieve this effect; I experimented with each of the selections and the associated hotkeys and had different results for each option, so I guess it's a situation where you play with each of the options and choose the one that is the most intuitive for you.
Thank you for the input, everyone. I noticed I have several options for edge loop select, including shift double left mouse button, which I find comfortable in using.

Just be aware, that holding SHIFT when double clicking LMB, adds the Edge Loop to what is already Selected, while just double clicking, only Selects the Edge Loop.
