That is because you are using a more recent Blender Version. The Normals > Auto Smooth has been removed in 4.1.

It is now best to add a Modifier > Normals > Smooth By Angle. (Make sure you have also set the Object > Shade Smooth).

Or even better, download the version of Blender being used in the video so you can follow along without hiccups. It's version 3.0.0 as seen on the video.
