i believe this video is a bit outdated from the current version of blender. Specifically the Principal BSDF within the shader window
Not really outdated, it's just that Blender changes so much everything all the time stops matching. All the YouTube videos, all the courses everywhere, no one will ever stay on par with the current Blender version because 20 seconds later they change it. So the way around this is to download the Blender version that is used in the lesson and work with that one, in this case is 3.1.2. It's not an outdated thing, more of a "where are the buttons now in the UI". The knowledge and core know how stay the same between each Blender version, so you don't have to worry about feeling you're using an "old" Blender. As you progress and get more mastery of 3D and Blender, you will care less and less which Blender version it is.
It's not outdated, just because the Principled BSDF looks different.
The core concepts of CG/3D being taught are timeless, the changes are Blenders UI and additional features/tools in the software.
Never think of the latest version of Blender as the only version to use, this is a fundamental mistake, especially when learning.
Studios and professional artists will continue with older versions of Blender if it suits the needs of the project with particular features, tools or behaviours.
And would not change version mid project, even if the latest new shiny version is released.
