I would say animation but I do enjoy sculpting a lot as well. Unpopular opinion: retopology is quite fun as well xD

For a pixar-y style, making the eyes larger would definitely help sell that cartoony look, will you do that?
Also, I think the ears may be a bit too far back, which might throw some things off.

Maybe a photo of your son in a neutral expression would help in the sculpt, since what I can tell all the photos are of him smiling
